Spicy Brown Mustard Chicken Salad

I work all weekend, which is not ideal, but I was grateful to have the past 2 days off. So I guess that was my weekend!?

So yesterday on my day off I did a super sweaty #NTC workout, some shopping and some DIY. {More on that later!}

Yesterday on Instagram {positivelyhealthyeb} I posted a picture of my salad and stated it would be on the blog, well here it is!

Spicy Mustard Chicken Salad

2 fully cooked chicken breast, chopped

2 cups of salad greens

1/2 bell pepper

1 Tbsp. apple cider vinegar

2 Tbsp. spicy brown mustard (Mine is from Trader Joe’s)

In a bowl mix 1 Tbsp. (of the 2) of the spicy brown mustard with the chopped chicken.

Next chop up the 1/2 bell pepper and add to the 2 cups of the salad greens. Add the chopped chicken to the salad. Finally use the bowl in which you used for the chicken mixture and add 1 Tbsp. of apple cider vinegar and the rest of the spicy mustard to make a dressing. Pour over your salad and enjoy!

The taste is a bit tangy but it is super yummy and a great salad for summer/spring!
