Gluten Free Honey Sesame Chicken

 One thing I missed a lot once I went gluten free a few years ago would be Chinese food. I loved getting the little boxes for take out and eating while watching a movie.
Well a few weeks ago I stumbled upon this recipe from Dinner at the Zoo and knew I had to make it asap! B told me P.F Changs had some competition! 🙂 Try it out sometime this week for dinner and let me know what you think!

This recipe for honey sesame chicken is baked not fried and has half the sugar of the original restaurant version. Adapted from Dinner at the Zoo. 
Serves: 4
Ingredients
  • 1.5 lb boneless skinless chicken breasts, cut into 1 inch pieces
  • salt
  • ground black pepper
  • 2 eggs, beaten
  • ½ cup + 1 tablespoon cornstarch
  • 2 tablespoons coconut oil
  • Cooking spray
  • ¼ cup honey
  • ¼ cup liquid aminos
  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • ¼ cup rice vinegar
  • 1 teaspoon minced fresh garlic
  • 2 tablespoons sesame seeds
  • 2 tablespoons sliced green onions
Instructions
  1. Preheat oven to 350 degrees.
  2. Place the chicken pieces in a large bowl, season generously with salt and pepper. Add ½ cup cornstarch to the chicken and coat thoroughly.
  3. Dip each piece of coated chicken into the egg mixture, place onto a plate. Heat a large skillet over medium high heat. Add 1 tablespoon of coconut oil to the pan and half of the chicken pieces. {Make sure that the chicken pieces are all in a single layer.}
  4. Cook the chicken until well browned, about 5 minutes, then flip the pieces and cook on the other side for another 4 minutes. Repeat the process with the remaining tablespoon of coconut oil and other half of chicken.
  5. While the chicken is cooking, combine the honey, liquid aminos, ketchup, brown sugar, rice vinegar, garlic, and tablespoon of cornstarch in a bowl.
  6. Coat a 9×13 pan with cooking spray. Place the chicken pieces in a single layer in the pan. Pour the sauce onto the chicken pieces. Cook for 25 minutes until sauce is thick and bubbly. Garnish with sesame seeds and green onions.
