Good morning and Happy Cinco de Mayo!
How was everyone’s weekend?
Mine for once did not revolve around work and it was glorious!
Friday
I had to work Friday, but I got a ton done before I had to go in. The highlights included an awesome NTC workout, getting some new books from the library and working on the DIY project that I posted a few weeks ago on Instagram {Positivelyhealthyeb}
I still have to sand it a bit more and then stain it but it is coming along nicely!
Saturday
Prom! My younger sister is graduating this year so I decided to make the trip home to watch her and all her friends go to prom. I did do run group {I had a nutrition talk which I will be sharing sometime this week} but I was able to leave directly after to see her get all dressed up!
After HUNDREDS of photos we headed back to my parents for a nice dinner and I helped my mom reserve some dinning places for their Disney trip this year!
Sunday
B and I took are normal work in the morning but I came back feeling not so hot, I had to call off work {pretty bad if I have to call off work!} The rest of the day was spent just laying on the couch, I am not sure what hit me but I think it was a just a 24 hour thing because I am feeling much better today!
I did manage to make some homemade salsa though for dinner {we paired it with some fish}
Healthy Homemade Salsa for Cinco de Mayo!!
1 can of organic black beans
1 can of organic diced tomatoes
1 can of organic corn
1 sweet onion
1 avocado
Juice of one lime
salt and peper to taste
Chop up the onion and avocado, add the cans to a bowl add seasonings and lime mix together and enjoy!

I make a very similar salsa but no onions or black beans and sometimes I add in red, green, and yellow peppers 🙂 So delicious!
